Conference Crepes

I have mentioned that I am LDS.  Twice a year the LDS church broadcasts General Conference.  Growing up my mom made us these crepes every morning on conference Sunday.  But they are so delicious I would eat them way more than just twice a year.


Here is the recipe for the crepe shells:

2 eggs
1 cup milk
2/3 cup Flour 
A pinch of salt

Mix your ingredients together and try to get all of the lumps out. I never get them all out though.
Then you get a small frying pan.  Make sure you spray it with cooking spray between each shell.  Turn your burner on low to medium heat. Pour some batter in the pan and swirl it around until it is the size you want your shell.  Once you start seeing little tiny pours in the shell it is done.


The shells will slide right out of the pan. Put them on a plate with a paper towel on bottom and between each crepe shell.  (Then if you don't eat all of the shells you can just place them in a gallon sized zip-lock bag with the paper towels.)


Our family eats crepes with chocolate pudding, cool whip, sliced bananas, and slivered almonds, but you can add whatever you dream up.  But I HIGHLY recommend trying our toppings!
