I will admit this is not really a "quick" recipe but it is very easy and TOTALLY worth the time it takes.
A dear friend of mine gave me this delicious recipe. I changed it ever so slightly to fit what I like, and I have frequently been making it ever since!
1 cup Onion, Chopped
1/2 cup Butter
2 cups Celery, Chopped
2 1/2 cups Carrots, Sliced
6 Medium Potatoes, Peeled and Diced
1/2 tsp Salt
3 1/2 cups Water
3 cubes Chicken Bullion
1/4 cup Flour
8 oz Cream Cheese
3 cups Milk
Real Crumbled Bacon
Cheddar Cheese, Shredded
In a large pan saute the onions in butter until they are tender.
Then add: Potatoes, Celery, Carrots, Water, Bullion, and Salt. Cover & Cook until tender, Stirring Occasionally.
While you are waiting for the potatoes to get tender, blend flour and cream cheese. Add some milk and get it as smooth as you can.
When the potatoes, carrots, and celery are tender. Add the cream cheese mixture as well as the rest of the milk. Bring to a boil stirring frequently. Boil for one minute.
Add two handfuls of Real Crumbled Bacon and season to taste.
We serve it with cheddar cheese because it makes it 10 times better, but it is good without it too. Our family loves it, and I hope your does too!
