2 Cans of Corn
1/2 of a green pepper, Chopped
1/2 cup red onion, Chopped
1/3 cup Mayo
1/4 teaspoon Onion Salt
Mexican Blend Shredded Cheese
Chilli Cheese Fritos
I never give a measurement for cheese because I usually just put as much as I can in everything I make. Real Healthy, I know! Sometimes when I don't have the Mexican blend I just use cheddar cheese and it still tastes really good.
Mix all of the ingredients EXCEPT the Fritos and chill for at least 1 hr. if possible.
Add the Fritos right before serving.
When I make this for our family we always have left overs. There is nothing worse than soft chips, so I just have everyone grab a handful of chips and add it to there own serving. That way we don't end up with soft chips in it the next day!
